Happy New Year!

Well the quest for sustained healthy eating and lifestyle continues. A new favorite quick snack that I heard Rich Roll (richroll.com) mention on a recent podcasts is a sweet potato with a good nut butter.

Simply grab an organic sweet potato and puncture four times, place in microwave (with skin), cook three minutes one side, flip and another two minutes. Slice into quarters and slab on your favorite nut butter…. Yum!

I’ve also taken to spaghetti squash, which is another quick snack that can be microwaved. It’s also extremely versatile for meal time.
