Our family loves this waffle recipe! I originally found the recipe on Allrecipes.com, called Waffles I. We modified the recipe to remove the dairy and white sugar. Please note there are three egg whites in this recipe.
This recipe is quick to mix up and make on the waffle iron, about 25 minutes total time. It’s also relatively healthy, and our kids (2 and 4) love them!
If you’d like to remove the eggs from this recipe for a vegan option, you can use applesauce (unsweetened, organic), 1/4 Cup of Applesauce = 1 Egg. We us this method in our pancake recipe. - 2 cups whole wheat organic flour we use 100% stone ground from Bob's Red Mill
- 3 egg whites for a vegan option, try applesauce, 1/4 cup = 1 egg
- 1 3/4 cups non-dairy milk we use equal parts almond and coconut
- 1/2 cup applesauce, unsweetened this is a substitue for original recipe which calls for vegetable oil
- 4 teaspoons baking powder
- 1/4 teaspoon salt
- 1/2 teaspoon pure vanilla extract
- 1 tablespoon cinnamon
- 1/2 tablespoon nutmeg

- Beat egg whites (or substitute) in large bowl with hand beater until fluffy.
- Beat in flour, non-dairy milk, applesauce, baking powder, salt, cinnamon, nutmeg, and vanilla until smooth.
- Spray preheated waffle iron with non-stick cooking spray. Pour mix onto hot waffle iron. Cook until golden brown, or waffle iron indicates done. Serve hot.
- Apply your favorite waffle topping! We love to add peanut butter for a protein boost, and splash on some warmed organic maple syrup,

The original recipe called for 1 tablespoon of white sugar which we removed as the kids can't tell, especially when the waffles will be smothered in maple syrup. Depending on your preference for sugar and sweetness, you may want to add back the white sugar, or try one of following substitutes:
- Honey: 3/4 tablespoon
- Maple Syrup: 3/4 tablespoon
- Agave Nectar: 3/4 tablespoon
- Stevia: 1/8 teaspoon
