  1. Beat egg whites (or substitute) in large bowl with hand beater until fluffy.
  2. Beat in flour, non-dairy milk, applesauce, baking powder, salt, cinnamon, nutmeg, and vanilla until smooth.
  3. Spray preheated waffle iron with non-stick cooking spray. Pour mix onto hot waffle iron. Cook until golden brown, or waffle iron indicates done. Serve hot.
  4. Apply your favorite waffle topping! We love to add peanut butter for a protein boost, and splash on some warmed organic maple syrup,

The original recipe called for 1 tablespoon of white sugar which we removed as the kids can’t tell, especially when the waffles will be smothered in maple syrup. Depending on your preference for sugar and sweetness, you may want to add back the white sugar, or try one of following substitutes:

  • Honey:  3/4 tablespoon
  • Maple Syrup:  3/4 tablespoon
  • Agave Nectar:  3/4 tablespoon
  • Stevia:  1/8 teaspoon
